What does the aim stabilizer do?  Is it like smoothing?   Also, do the two modes have different functions?

yes, they work like smoothing mode 1 and smoothing mode 2.
just try them and find a suitable one you like.

just give it some shots,
it's difficult to scribe a thing like that with words,
but you can safely try it on your own.
